Foodscape Built from Standing Bread

Concept: Loaves stand as long as the evening allows.
Proofed Architecture begins with a refusal, since bread declines to lie down and a foodscape appears wherever that refusal is honoured. Cutting a base makes it possible: something is taken away so that something may rise, and the exchange stays visible from the first glance. Hands do the rest, without armature, support or adhesive, one loaf at a time, each placed and released and watched for a moment before the next is lifted.
Scoring belongs to the same order of decisions. Blade enters slack dough, the oven settles the outcome, and the pattern opening across the crown was proposed rather than commanded. Sourdough keeps its own time, and a practice built on ferment accepts a collaborator that cannot be hurried or corrected. Craft here is patience rather than technique, and the crumb records every hour it was given. Flavour deepens in the same hours that build the structure, so neither can be adjusted without the other.
Candlelight arrives before anyone else. Flames sit low among the loaves, and the crust takes that light unevenly, which is what crust does. Food design usually ends at the plate. Beginning underneath changes the discipline, since a loaf that must stand is proofed and scored for standing. Working upward from the base builds a foodscape rather than a setting, and structure and taste are settled together instead of in sequence.
Foodscape holds the table as terrain: height in place of course, weight sensed before anything is lifted, shadow doing the work a wall would do. Second frame moves to marble, one loaf scored in pine form, brightness where the first kept its density. Same hand, other light. Wax will go before the bread does, and neither was built to be kept. When the first hand arrives, Proofed Architecture ends, and the arrangement belongs to that room alone, on that evening, for as long as it lasts.
